Creamy Italian Dressing

Most visitors to the ranch house kitchen ask for the recipe to this dressing.  Almost Ranch, not fully Italian- its creamy and addicting!
Create it with herbs fresh from the garden or dried from the pantry.
Make the original recipe full and rich or trim it down by swapping half of the mayonnaise for greek yoghurt.
Mix up a batch on the weekend and store in a jar in the fridge for fantastic salads all week long.

*Note: Dried herbs are more potent than fresh herbs.  Reduce the amount called for in the recipe by at least 1/3 if using dried herbs.

Creamy Italian Dressing

2-3 cloves garlic, crushed
3 T parsley
3 T basil, chiffonade (rolled tightly and cut into small strips)
2 T chives
1 T oregano
1/2 tsp dried paprika
1 cup mayonnaise or greek yoghurt
1/2 cup sour cream
1/4-1/2 cup milk (or thinned to desired texture)
Salt & pepper to taste

Add all ingredients to a medium size bowl and mix well.  Refrigerate for at least an hour to let flavors blend.

Makes 1 1/2-2 cups of dressing
