Honeydew Cucumber Salad with Feta
Tis the season for cool, crisp salads in their amazing endless variety.
I prepped this beautiful light salad for a BBQ at a dear friend’s house and almost ate the entire bowl before it even walked out the door.
Sweet honeydew, crunchy cucumber and creamy feta combine with a bright lemon dressing, a touch of red onion and fresh dill.
The result? A lovely side dish that is perfect for summer picnics or BBQ’s on the back deck.
Honeydew Cucumber Salad with Feta
Ingredients:
1/4 cup lemon juice
1/3 cup extra virgin olive oil
2 tsp honey
1 tsp kosher or sea salt
Dash of ground pepper
2 medium honeydew melons, seeded, cut into bite size cubes (about 8-10 cups)
2-3 cucumbers, cubed (about 4 cups)
1/2 cup minced red onion, briefly rinsed
1/3 cup chopped fresh dill
2 cups feta cheese, crumbled
In a small jar, mix together lemon juice, olive oil, honey, salt and pepper. Shake well until dressing ingredients are well incorporated.
In a large serving bowl, add melon, cucumber, onion and dill weed. Top with dressing and toss well.
Serve immediately or chill up to 8 hours. Just before serving top with feta cheese.
