Good Old Fashioned Cucumber Salad
August brings inevitable slide towards the beginning of school, still hot days and overwhelming abundance from the garden.
Hence, the mass quantities of cucumber, zucchini and yellow squash filling every available open counter space in my kitchen. So, the search for tasty ways to use up all this nutritional goodness begins!
This crisp, cool salad is the perfect easy side for a grilled main course on those still hot August evenings. Tangy with hint of sweet, the crunch of freshly picked cukes is enhanced by paper thin slices of sweet yellow onion.
An old fashioned recipe, this salad showed up frequently at potlucks when I was growing up.
Good Old Fashioned Cucumber Salad
4 medium cucumbers
1 medium sweet yellow onion (I used Walla Walla sweets)
1/2 cup mayonnaise
2 Tblsp white vinegar
2 Tblsp sugar
Dash salt and pepper
Splash of lime juice
Using a mandolin slicer or a very sharp knife, thinly slice cucumbers and onion into a medium serving bowl.
Gently stir in remaining ingredients and refrigerate for up to an hour before serving to allow salad to thoroughly chill.
Serves 4-6
