Frozen Cookies and Cream

It’s a tradition in our house that the birthday honoree gets to choose their own dinner and dessert- anything they want- very few limitations.

This beautifully rich “needs two cups of coffee to go with” frozen cookies and cream dessert was my favorite when I was a child and I love that my kids love it too!

Good grief- look at all those layers of chocolaty, creamy, frozen yumminess! Is there really any question what you would request on your birthday?

Depending on the time of year, and birthday honoree, we make several variations of this recipe.
My personal favorite?  Substituting Trader Joe’s Peppermint Candy Cane Joe Joe’s for the cream filled cookies and candy cane ice cream for the vanilla called for below- its a peppermint chocolate frozen explosion! Your life might never be the same…

Frozen Cookies and Cream

*Note: Plan ahead- several hours or overnight in the freezer is required before serving

Ingredients:
1 package double stuffed cream filled cookies
1 gallon vanilla ice cream, softened
16 oz container fudge or dark chocolate frosting
1 container whipped topping

Directions:
Place cookies in a gallon freezer bag and crush with hands or a rolling pin until completely broken into pieces.

Lightly spray a 9×13 baking pan with non-stick spray.  Gently press approximately 3/4 of crushed cookies in bottom of pan. Spread half of vanilla ice cream over cookies. Place in freezer for about an hour or until hardened.

Remove from freezer and spread vanilla ice cream with chocolate frosting. Place back in freezer until hardened.

Remove from freezer and layer remaining ice cream, all of the whipped topping and the last of the crushed cookies over top. Place back in freezer and allow to freeze until solid, about three hours or overnight.

When ready to serve, allow dessert to stand at room temperature for 8-10 minutes
